I’m not sure what the past week has been like where you are, but here in Sydney it has been FREEZING! I’ve started most mornings this week looking at single digits on the thermometer in the car on the way to kindy drop off. Seriously, 6 degrees?! Who wants to load two kids into the car at 8am when it is 6 degrees? I think I need a garage. A heated garage!
Anyway, that little ramble has nothing at all to do with this weeks meal plan and recipes, except to say that I’m all about warm, homely food right now. Take some time to plan out your meals for the week ahead. It will help you to get organised and stay motivated on those busy weekday evenings. Easy fried rice. For those evenings when you just need to throw something together quickly this easy fried rice is the perfect solution. It’s also great for lunchboxes in a thermos container.
Slow cooker italian beef ragu with pasta. I had the absolute pleasure of meeting the gorgeous (both inside and out!) Lucy from Bake Play Smile this week. I’m planning to try out this slow cooker recipe as part of our meal plan this week. I hope you enjoy it too.
Chilli con carne (slow cooker or stove top). Sticking with the slow cooker theme, I’ve put this yummy recipe into the meal plan and am going to cook up a few spare batches for the freezer.
Mexican pasta bake. I saw this yummy looking recipe on The Organised Housewife’s site this week (if you haven’t already, you should check out her site, it’s amazing and she seems really lovely too!) I’m going to give it a try as part of our meal plan this week.
Pesto stuffed chicken breast. I’m going to make this with capsicum pesto for this weeks version. You can prep it ahead of time and just cook it prior to serving it.
Home made pizza has become a regular on our weekly meal plans. It keeps the boys happy and they enjoy helping to prepare it. I’m planning to use some of the capsicum pesto from the chicken breasts as a base and top it with sliced fresh mozzarella cheese for hubby and I. I use this easy no rise pizza dough recipe. Yum!
