Yummy, fluffy pancakes…
There is nothing quite like starting the day with perfect pancakes. Fluffy and light, with a hint of sweetness and a dash of vanilla. Mmmmm!
My boys LOVE pancakes and regularly request it as a breakfast treat. This simple pancake recipe is my go to for quick easy delicious light and fluffy pancakes. No fuss, simple to remember, plus, it stores for a few days in the fridge to make a new batch later if needed.
I like to make mini pikelets to put into lunchboxes with any left over batter. They freeze really well so you can make up a batch of pancakes on the weekend and freeze pikelets for school lunches the next week. Or you can keep a few and top them with cream cheese, smoked salmon and capers for a light lunch or quick snack.
