These parmesan crumbed veal schnitzels are a tasty, quick weekday dinner that the whole family will love.
Ingredients
- 4 veal schnitzels (approximately 100g each)
- ½ cup fresh breadcrumbs (made from day old bread)
- 1 tbs dried parsley
- 1 tbs dried parsley
- 1 tbs died oregano
- ⅓ cup finely grated parmesan cheese
- 3 tbs olive oil
- 1 egg, lightly beaten
Instructions
- Combine breadcrumbs, parmesan, parsley, oregano and 2 tbs of olive oil in a small bowl.
- Coat veal in egg.
- Press breadcrumb mixture onto both sides of veal (note it is not supposed to cover the whole veal so don't worry if it coat it).
- Heat pan to medium heat and add the remaining 1 tbs of oil.
- Cook veal in pan for 4-5 minutes on each side.
- Serve with mashed potato and vegetables or your choice of side.
