Delicious and healthy(ish) creamy pasta… Yes please!
Generally the words healthy creamy pasta wouldn’t naturally go together. Anything creamy is usually loaded with fat, calories and not particularly healthy. But do not fear, I have revamped a traditional creamy pasta recipe into something a bit healthier (and much lower in fat and calories). It is still not an everyday meal choice in my books, but good for those days when you want something creamy and you’re longing for a bit of a carb overload.
The trick is that I don’t actually use cream… well not “real” cream. Instead I replace it with low fat sour cream, some lemon juice and a bit of olive oil.
