Beef and Vegetable Meatloaf

Serves: 6-8 serves
  • 500-750 g beef mince
  • 2 teaspoons dried oregano
  • 1 brown onion, grated
  • 2 garlic cloves, crushed
  • 1 cup frozen carrot, pea and corn mix
  • 1 egg, lightly beaten
  • ⅓ cup barbecue sauce
  • ⅓ cup tomato sauce
  • ½ cup grated tasty cheese
  • ½ cup fresh white breadcrumbs
  • mashed potatoes, gravy and steamed green beans, to serve
  1. Combine all ingredients (except cheese) in a bowl. Mix well (using hands is easiest!)
  2. Lightly spray a loaf tin (or line with baking paper) and preheat oven to 180 degrees.
  3. Push meatloaf mix evenly into the loaf tin. Top with cheese and cover with foil.
  4. Cook in oven for 25 minutes covered then uncover and cook for a further 20 minutes.
  5. Serve with mashed potato, gravy and steamed beans
