There is nothing quite like starting the day with perfect pancakes. Fluffy & light, with a hint of sweetness. Try this simple pancake recipe today...Mmmmm!

Serves: 12
  • 2 cups self raising flour
  • 2 eggs
  • 2 cups milk
  • 1½ tsp vanilla essence
  • ⅓ cup sugar
  1. Combine vanilla essence, milk and eggs in a mixing bowl and whisk thoroughly.
  2. Add in flour and sugar gradually and whisk until all lumps are removed (you can sift it if you've got the patience!)
  3. Heat a non stick frying pan to medium high (about 7 out of 10 on my scale)
  4. Wait 4-5 minutes for it to properly heat up (this is key)
  5. Add several spoonfulls of mixture to the middle of the pan to make a pancake of the desired size
  6. Wait until the pancake is covered in small bubbles and then flip
  7. Cook for a further 2 minutes on the other side
  8. Serve with fruit, butter or honey. YUM!
