Delicious apple berry cupcakes that are perfect to freeze.

  • 2 apples, peeled and diced into 1cm pieces
  • ½ cup frozen mixed berries
  • 2 tbs lemon juice
  • 2 tsp ground cinnamon
  • 1⅓ cups caster sugar
  • 1⅔ cups self-raising flour
  • 4 eggs
  • 250g unsalted butter
  1. Combine butter, sugar and lemon juice in a large mixing bowl and cream with a mixer until light and fluffy
  2. Add in eggs and cinnamon and mix until combined
  3. Gradually fold in flour and mix until combined
  4. Add apple and mixed berries, fold in gently
  5. Spoon into muffin pans and bake for 15-20 minutes at 180 degrees celsius or until muffins spring back and are lightly browned.
