This healthy creamy pasta recipe is the perfect low fat alternative to traditional high calorie pasta recipes. All the taste with much less fat!

  • 200g lean bacon (fat trimmed, sliced)
  • 1 cup frozen peas
  • 1 cup mushrooms, sliced
  • Large handfull of green beans, topped and tailed
  • ¼ cup semi dried tomatoes, finely sliced
  • 1 pack spaghetti
  • 1 tbs lemon juice
  • 1 tbs olive oil
  • ¾ cup light sour cream
  1. Place spaghetti in a saucepan of boiling water and cook according to packet instructions.
  2. Add beans and peas for the last 6 minutes of cooking,
  3. Cook bacon in frypan (use spray oil if needed) until browned, set aside.
  4. Cook mushrooms in frypan until soft.
  5. In a small bowl combine sour cream and lemon juice.
  6. Remove spaghetti and vegetables from the water and set aside ½ a cup of cooking water.
  7. Combine bacon and sundried tomatoes into the spaghetti and coat with the sour cream mixture. Add some of the cooking water if required.
