These parmesan crumbed veal schnitzels are a tasty, quick weekday dinner that the whole family will love.

Serves: 4
  • 4 veal schnitzels (approximately 100g each)
  • ½ cup fresh breadcrumbs (made from day old bread)
  • 1 tbs dried parsley
  • 1 tbs dried parsley
  • 1 tbs died oregano
  • ⅓ cup finely grated parmesan cheese
  • 3 tbs olive oil
  • 1 egg, lightly beaten
  1. Combine breadcrumbs, parmesan, parsley, oregano and 2 tbs of olive oil in a small bowl.
  2. Coat veal in egg.
  3. Press breadcrumb mixture onto both sides of veal (note it is not supposed to cover the whole veal so don't worry if it coat it).
  4. Heat pan to medium heat and add the remaining 1 tbs of oil.
  5. Cook veal in pan for 4-5 minutes on each side.
  6. Serve with mashed potato and vegetables or your choice of side.
