How to cook the perfect roast chicken and vegetables

  • 1 roast chicken approximately 1.8kg
  • 5 large potatoes
  • 5 medium carrots
  • 1 large sweet potato
  • Olive oil
  • 2 tsb Mixed herbs (dried)\
  • 2 tsb Crushed garlic
  • 300g green beans
  • Gravy mix
  1. Preheat oven to 180 degrees.
  2. Place chicken in middle of baking dish and brush with oil. You can add some seasoning if desired.
  3. Cut up vegetables into rough 5cm cubes
  4. Place vegetables, 2 tbs olive oil, mixed herbs and garlic in a small plastic bag and shake to coat.
  5. Put veggies into pan around chicken.
  6. Cover chicken with aluminium foil.
  7. Place baking pan into oven.
  8. Bake for 1hr covered then uncover and bake for a further 30minutes.
  9. Check cooked through by inserting a skewer and making sure the juices run clear.
  10. Serve with green beans & gravy.
