This sausage casserole recipe is so easy and cheap to make and it is a family favourite in our house. It also freezes really well so is great as a back up meal.
Easy Sausage Casserole

This easy, quick, cheap meal is also great to freeze.
Ingredients
- 1 pack of sausages (approximately 700g)
- 2 tins chopped tomatoes
- 2 cloves garlic, crushed
- 1 tsp dried basil
- 1tsp dried parsley
- 1 tsp dried oregano
- 1 large onion, chopped finely
Instructions
- Cook sausages in pan on medium heat, turning reguarly for 10-15 minutes or until almost cooked through.
- Remove sausages and cook onion, garluc and herbs for 5 minutes.
- While these cook, slice sausages into thin slices or cubes.
- Return sausages to pan and add tinned tomatoes and approximately ½ a cup of water.
- Reduce temperature so just simmering and cook for 15-20 minutes.
- Serve with rice and vegetables.
