Chicken Parmigiana Meatballs Recipe

This awesome recipe is a bit of a twist on the usual chicken schnitzel. It was created by Brita and I loved it so much I asked her if I could share it with you all!

Awesome Chicken Schnitzel Meatballs

These are a perfect healthy alternative to the more traditional high fat chicken schnitze. They would also be great served cold in lunchboxes the next day.

Ingredients for chicken parmigiana meatballs

  • 500g lean chicken mince
  • 1/4 cup Parmesan grated
  • 1/2 cup Wholemeal breadcrumbs
  • Fresh parsley chopped
  • Zest of half a lemon (makes them taste SO fresh!)
  • 2 cloves of garlic crushed
  • 1 egg
  • Half an onion, finely chopped
  • Spray olive oil
  • Jar of pasta sauce
  • 50g Light tasty or mozzarella cheese to sprinkle over the top

How to make chicken parmigiana meatballs

  1. Preheat oven to 200 degrees celsius
  2. Set aside 1/3 of the bread crumbs and sprinkle over your bench.
  3. Mix all ingredients together except pasta sauce, tasty cheese and olive oil spray.
  4. Roll into approximately 20 balls (you can make fewer larger ones if you want) and roll in crumbs on bench.
  5. Place on a lined baking tray and bake for 15 minutes
  6. Take out, top with pasta sauce and a sprinkle of cheese and return to oven for a further 5 minuts.
  7. Serve with your favourite salad
