Who doesn’t love a sweet, delicious treat for afternoon tea? These gorgeous apple berry cupcakes are sweet with a hint of tartness. Perfect to freeze, heat them for 30-60 seconds and enjoy warm with a cup of tea.
Delicious Apple Berry Cupcakes Recipe
I love to have a stash of baked snacks and treats in the freezer for lunch boxes and afternoon tea treats. This recipe is perfect for when you want a sweet treat but are also craving a bit of tartness. You can modify the types of berries you add to make it more or less tart (raspberries tend to be more tart than blueberries or strawberries). I’ve also used frozen mango pieces in place of the apple and it has worked well.
Ingredients
- 1/2 cup frozen mixed berries
- 4 eggs
- 250g unsalted butter
Method
- Combine butter, sugar and lemon juice in a large mixing bowl and cream with a mixer until light and fluffy
- Add in eggs and cinnamon and mix until combined
- Gradually fold in flour and mix until combined
- Add apple and mixed berries, fold in gently
- Spoon into muffin pans and bake for 15-20 minutes at 180 degrees celsius or until muffins spring back and are lightly browned.

- 2 tsp ground cinnamon
- 1⅓ cups caster sugar
- 1⅔ cups self-raising flour
- 4 eggs
- 250g unsalted butter

- Add in eggs and cinnamon and mix until combined
- Gradually fold in flour and mix until combined
- Add apple and mixed berries, fold in gently
