1. Shredded chicken, mayonnaise, celery and walnuts
This delicious mix sounds a little odd but it is actually totally awesome. Ideally blend it all together in a food processor so it’s a bit broken up (don’t totally mush it) or at least chop up the celery and walnuts finely. It’s so yummy.
2. Toasted roast beef, cheese and gherkin relish
This is one of my favourite toasted sandwiches. I usually make it as an open melt to cut down on the amount of bread a bit. You can also serve it with a little side salad of baby spinach leaves tossed in some balsamic vinegar. Mmmmm!
3. Turkey, cranberry sauce, avocado & baby spinach wrap
A pretty well tested combination but oh so tasty! Add it to a wrap for a bit of variety. Freshly cooked turkey is so much better than the stuff from a packed so either get baking (and freeze slices in batches) or find a really excellent deli.
4. Lettuce, carrot, cheese, beetroot & pineapple
Ok, so I acknowledge that not everyone is in support of pineapple on a sandwich but this really is so good. The trick is to grate the cheese & carrot and chop up the lettuce into fine shreds. This one needs to be put together on the spot or you’ll end up with a soggy beetrooty pineapply mess.
5. Pesto, bocconcini & ham
I like this one a really good quality crusty roll. Spread on the pesto fairly generously, add slices of bocconcini & top with shredded ham. Enjoy!!
