If you’re on a tight budget, or just looking to lower your grocery bill, then putting together a budget meal plan is a great way to save a few dollars. This meal plan includes three weeks of cheap and easy meals that the whole family will love!

Quick & Easy Meal Plan Week One
Week one features chicken, beef, turkey and vegetables in a variety of bakes, pies and one pot dishes.
Meals include chicken parmesan casserole, beef stroganoff, chicken & vegetable skillet, taco bake, taco spaghetti, chicken pot pie and turkey meatballs. All are suitable to freeze and all make great left overs the next day.
Monday: Chicken Parmesan Casserole
Tuesday: Beef Stroganoff
A super easy slow cooker option that’s even better the next day.
Wednesday: Ranch Chicken and Vegetable Skillet
A healthy one pot meal ideally for a busy weeknight.
Thursday: Taco Bake
Taco bakes are a delicious twist on a traditional taco. Serve with coleslaw or a basic green salad for an easy, tasty meal.
Friday: Easy Taco Spaghetti
I have to be honest and say that I wasn’t sold on this when I first saw it but it’s actually super tasty. It works well made after the taco bake as you can use the same mince.
Saturday: Dump and Bake Chicken Pot Pie
So yummy and you can pack in any veggies you want.
Sunday: Moroccan Turkey Meatballs
Turkey is such an underrated meat. It’s so versatile and very lean so it makes an excellent alternative to beef mince.
Quick & Easy Meal Plan Week Two
Week two includes more family friendly quick and easy meals which again can be made ahead of time and frozen. You might also like to make up double portions to freeze for days when everything falls apart and you need a quick meal.
Monday: Parmesan Chicken Rollups
These roll ups are also good cold. If you don’t want to use pastry I make a similar stuffed chicken dish wrapped in prosciutto without the pastry.
Tuesday: Sloppy Joe Casserole
A classic american dish very much like a shepherds pie.
Wednesday: 15 Minute Chicken Alfredo
The perfect last minute weeknight meal. On the table in under 15 minutes.
Thursday: Honey Soy Slow Cooker Lamb
I love lamb but it can be expensive. This slow cooker lamb is super budget friendly and freezes perfectly. Make up a double serve 😉
Friday: Cheeseburger Quesadilla
A bit of a twist on the Mexican quesadilla.
Saturday: Cheater Lasagna
All in one quick and easy lasagne.
Sunday: Baked Potato Soup
This recipe uses a pressure cooker but you could do the same in a slow cooker.
Monday: Honey Garlic Chicken
A family friendly crowd pleaser that’s quick, easy and budget friendly.
Tuesday: Creamy Chicken and Herb Skillet
Turn a chicken breast from blah to wow with this tasty recipe. The sauce is YUM!
Wednesday: Easy Fried Rice
Fried rice is a hit with my kids and a great last minute dinner when you don’t really have much in the fridge. You can add chicken, prawns, mince or just about anything you’d got left over.
Thursday: Baked French Dip Sandwiches
Sandwiches for dinner? Yes please!
Friday: One Pot Vegetable Pasta
One for the veggie lovers (or meat free Monday). Packed with flavour, quick and easy.
Saturday: Crispy Prawn Tacos
Just looking at these makes my mouth water. SOOO good.
Sunday: Roast Veggie Frittata
Frittatas are perfect for using up left overs and you can mix and match this with anything you have on hand. If you want to add in meat or fish you can (I often add tinned salmon or bacon pieces).
